Blogmas Day 20: Gingerbread People

So today we went to Waterstones and I finished my Christmas shopping, we had a rash scare from Theo but the doctor reassured us it was a common rash and he is now on antibiotic cream. So hopefully it goes away in a few days and isn’t causing him discomfort.

I wanted to relax this evening so I made the dough during Theo’s morning nap today and just left it to chill in the fridge. I’ve never made gingerbread before as I always thought it would be difficult considering I am a complete novice at most baking and cooking it wasn’t too hard.

The recipe I followed is this here, the only fault I made was when I did two batches I changed places on where I put the oven rack and the second lot didn’t rise so bear that in mind when placing it in the oven.

Recipe:

  • 100g Salted butter
  • 3tbsp Golden Syrup
  • 100g Dark Sugar
  • 1/2 tsp Bicarbonate of soda
  • 1tbsp Ground Ginger
  • 1tsp Ground Cinnamon
  • 225g Plain Flour
  • 50g Icing Sugar

This was a relatively easy recipe to put together thankfully and I’m looking forward to icing them with Theo tomorrow. My only comment on the recipe is that I would use less ginger and more cinnamon, as it isn’t very sweet however that may change when you ice them and with personal preference.

I think this is going to be one of my new Christmas traditions to start as a family, I’ll hopefully perfect the recipe by next year. I had a lot of fun doing this and the components weren’t hard to make and follow. I’m really glad I left the dough in the fridge for a few hours as it made it solid whereas when I put it in the fridge it was too soft to roll.
